Farmer Jim with some of the jalapeños he grows on the farm. He explains that at first, he thought the cracks in the jalapeño skin meant that the vegetable was damaged. He learned from some of his Latin American customers at the farmers market that this actually meant the pepper was hotter, and thus more desirable.
