We own ShadowBrook Farm and Dutch Girl Creamery. We produce Artisan goat cheeses. We run a Grade A goat dairy, which is pasture-based during the milking season. Our herd is not certified organic, however, the goats graze on our organic pasture, and we buy as much organic feed as we can source locally.

Our cheeses are made in small batches, by hand, using only natural ingredients. We make both raw milk and pasteurized cheeses and will soon be adding goat yogurt and goat milk, which will have to be pasteurized to be sold at stores and farmer’s markets in Lincoln and Omaha.

Starting this business has been rewarding, however, after four years we are still working to pay for our initial investment of equipment and infrastructure. We are a small family farm working very hard to realize this dream. Producing a hand-made product such as this is expensive. We don’t have the economy of scale on our side. But of course, this hands-on approach is what allows us to produce a very high quality old-world style cheese.
